Stuffed Tomatoes

Ingredients
4 Large Firm Tomatoes1.25lb Ground Turkey1/2c Pine Nuts1 can Tomato Paste2T Ghee Butter or Olive Oil1/2-1t Cinnamon, ground1/2-1t Allspice, ground1t mint, dried2T Olive Oil2-3 Garlic cloves1 small onion, diced1t raw sugar (optional)
Directions
Makes 4 servings
1) Rinse tomatoes and cut the top off of each tomato.
2) Scoop out the pulp and set the pulp aside.
3) In a saute pan add the ghee butter (or olive oil).
4) Saute the onions, garlic, and pine nuts
5) Add the Ground Turkey and cook until its half way done
6) Add the cinnamon, allspice, and dried mint, cook until done. (Do not over cook meat)
7) Stuff the tomatoes with the turkey meat mixture.
8) Take the tomato pulp and place it in a blender.
9) Blend the tomato pulp and add the tomato paste, salt and pepper and 1 clove of garlic.
10) Optional, if the tomato pulp is too acidic, add 1t of raw sugar
11) Pour the Pulp Mixture in an 8x11 baking pan.
12) Place the Tomatoes in the baking pan on top of the pulp mixture and allow to bake.
13) Bake at 400 degrees for 20 minutes.
