Tangela's Black Bean Burger

Ingredients
2 Cans Black Beans rinsed and drained 1 Spanish onion diced 4 or 5 cloves garlic minced Approx. 2 Cups Panko bread Crumbs 1 egg 1 Cup Frozen Corn Kernels olive oil for frying Fresh Cilantro Fresh Basil
Directions
Combine 1 can of beans, onions and garlic in a food processor.
Add in egg, corn and 1.5 cups of bread crumbs....use spatula to mix together. Mixture should be stiff.
Heat a griddle on high heat and spritz surface with olive oil. Form mixture into patties using 1/3 Cup measure for each "burger". Dip burgers in remaining bread crumbs and fry on griddle util browned and "set". Serve immediately. These freeze well. Great on a salad or with a big slice of tomato and a little schmere of mayo. This recipe makes about 8 to 10 burgers.
