Lentil Meat Loaf

1 cup dried lentils, rinsed1/2 onion, diced1 carrot, diced2 celery stalks, diced1/3 can tomato paste1/2 cup tomato sauce1 egg white2 Tbsp Ketchup
Cook lentils in boiling water for about 30 min. or until soft.
Meanwhile, sautee the onions, carrot, and celery for about 10 minutes, or until soft. Add in the tomato paste and sauce, and cook for another 10 minutes.
When the lentils are soft, drain out excess water, and mash up a bit. Then mix into the tomato mixture.
Add egg white and stir until combined.
Place in baking loaf tray, and top with a little ketchup.
Bake in a 350 degree oven for about 60 minutes.
