2 EGGS1/2 C VEGETABLE OIL1 1/4 C SUGAR1C GRATED RAW ZUCCHINI1 TSP VANILLA1/2 TSP BAKING SODA1 1/2 C ALL PURPOSE FLOUR1 1/4 TSP CINNAMON1/2 TSP BAKING POWDER1/2 TSP SALTNUTS, RAISINS, CHOCOLATE CHIPS, ETC ARE OPTIONALI SUBSTITUTE HALF SPLENDA FOR HALF OF THE SUGAR (1/2 SUGAR AND 1/2 SPLENDA) I ALSO USE 1/4C UNSWEETENED APPLE SAUSE AND 1/4 C OIL INSTEAD OF ALL THE OIL.

COMBINE ALL INGREDIENTS , MIX WELL
PUT IN A GREASED AND FLOURED BREAD PAN.
BAKE AT 350 FOR 1 HOUR
MAKES ONE LOAF
