LIGHT Baked Potato & Garlic Soup

3 bulbs of roasted Garlic690 grams of cooked cubed Baked Potato2 cups Onions, chopped4 cups Blue Menu Chicken Broth - no salt added1 cup hot Milk, 1%Olive Oil, 1 tbsp (remove)1 cup chopped green onion freshly ground black pepper to taste90 grams soft goat's cheese - divided into 6 x 15 gram servings
Saute onions in olive oil
Add 3 whole bulbs of roasted garlic plus wine. cook until alcohol is evaporated.
Add cooked cubed baked potatos, broth, and hot milk
Blend until smooth - heat until soup bubbles - add chopped green onions for last few minutes. Add freshly ground black pepper to taste
Serve with 15 grams crumbled goats cheese on top of soup
Makes 6 services, 1-1/2 cups each
