Tofu Poppy Seed Dressing

1 tsp paprika2T poppy seed1/2 cup cider vinegar1/2 T light mayonnaise2 T raw, grated onion1/2 cup silken tofu1/2 cup honey2T dijon mustart1/4 cup olive oil
Mix all in a blender until creamy. Refrigerate several hours before serving (good luck waiting that long)! Serve with fresh fruit or assorted greens.
