Italian Veggie Sandwich

Ingredients
1 tablespoon extra virgin olive oil1 small bell pepper, sliced 1/4-inch thick1/4 medium onion, sliced1 garlic cloves, minced2 slices of a medium tomato1 tbsp of grated parmensan1 enrollado
Directions
Let oil get hot. Cook peppers for 3 minutes. Add onion and garlic and cook until desired tenderness. Place veggies on bread add tomatoes and parmesan cheese. Serve hot
