Prosciutto-Stuffed Figs

Ingredients
8 soft ripe figs16 slices Prosciutto ham4 oz Chevrepepper to taste
Directions
Make a lengh-wise slit in each fig, as if to quarter the fig, but only halfway down the fig so that you can open it. Fold 2 slices of prosciutto together, making a ruffle, and stuff into the slit of the fig. Top with a spoonful of chevre. Preferred serving, place 2 figs on a bed of greens, and drizzle with a vinagrette. Makes 4 servings.
