Carbquik Zucchini Bread

2 eggs3/4 cup Splenda1/2 cup canola oil1 1/2 tsp vanilla1 1/2 tsp Carbquik1 cup grated zucchini1 1/2 tsp cinnamon1/8 tsp baking powder1/2 tsp baking soda
Preheat oven to 350 degrees. Mix eggs, Splenda and oil until blended. Add vanilla, cinnamon, baking powder and soda. Mix again. Add Carbquik and mix until incorporated and no lumps remain (don't overwork). Stir in zucchini.
Pour into a greased 8 x 4 inch loaf pan (batter will be thick) and spread to even top. Bake 30 minutes.
