Pumpkin Oatmeal Muffins

Ingredients
2 cup quick cooking oats3 cups unbleached all-purpose flour1.5 cups brown vegan sugar4 teaspoons baking powder3 teaspoons apple pie spice1 teaspoon baking soda0.5 cup dried cranberries1.5 cup vegan almond milk1.75 cups canned pumpkin8 tablespoons applesauce
Directions
1. Preheat the oven to 400 F. 2. Spray twelve medium muffin cups with non-stick cooking spray or line with paper baking cups. 3. Combine the dry ingredients. Mix well. 4. Mix pumpkin, applesauce, and milk together. Add to dry ingredients and mix until just moistened. 5. Add in dried cranberries. 6.Fill muffin cups untl almost full. 7. Bake 22 to 25 minutes. (until wooden pick inserted and comes out with a crumbs) Cool for five minutes in pan on a wire rack.
