Ingredients
1 pounds Tofu -- medium or firm¼ cup Peanut butter -- creamy 2 tablespoon Soy sauce1 lime juice (juice of 1)2 tablespoon Honey or maple syrup1/2 tablespoon Garlic powder1 teaspoon fresh grated Ginger (dried is fine, use less)1 tablespoon Onion -- grated
Directions
slice tofu ito 1/2-inch slices. drain between layers of towels with a stack of plates on top for at least 30 minutes. cut tofu into 1.5 inch cubes. Place tofu in a single layer in a 7 x 11-inch baking pan In a small bowl, combine remaining ingredients. Mix with a fork or wire whsk until wel-blended. Sprad mixture evenly over tofu. Cover and marinate in the refrigerator and let stand at room temperature 30 minutes. Preheat oven to 350 deg. Bake tofu, uncovered, 25 minutes. Then place under broiler and broil until nicely browned.
