Cauliflower Fried "Rice"

Ingredients
2 T. Canola Oil2 T. Sesame Oil1 Medium Cauliflower (grated on large side of grater)8 oz fresh bean sprouts3 cloves garlic4 T Soya SauceS & P to taste (white pepper for heat, if desired)1 bunch green onion (scallion) chopped
Directions
Heat the oils in a wok or large pan over medium-high heat. Add all except scallions and stir-fry until sprouts/cauliflower are almost tender (al dente), about 3 minutes. Make hole in center and add beaten eggs to pan. Scramble thoroughly and mix into cauliflower mix. Stir in scallion and stir until just heated.

Makes 6-8 servings.
Substitute chicken or shrimp for egg, if desired.
