orange bran flax muffin

1.5 cup oatbran1 cup all purpose flour1 cup ground flaxseed1 cup wheat bran1 TBS baking powder1/2 tsp salt 2 oranges,cut into 1/8's1 cup brown sugar 1 cup buttermilk1/2 cup canola oil2 eggs1 tsp baking soda1.5 cup golden raisins
Preheat oven to 350.Line 2 12-cup muffin tins wi th paper liners.In a large bowl,combine oatbran,flour,flaxseed,wheatbran,baking powder and salt.Set aside.
COMBINE oranges,brown sugar,buttermilk,oil,eggs and baking soda in a food processor.Mix well.
POUR orange mixture into dry ingredients.Mix until well blende.Stir in raisins.
DIVIDE batter evenly among muffin cups.Bake 18-20 min. or until toothpick inserted in center comes out clean.Cool in pans for 5 min. before moving to a cooling rack.

This recipe needs revision! I was hesitant about the whole orange being pureed into the muffins. The pith tends to cause bitterness and they were very bitter. The rind should be grated off using a micro plane and juicing the oranges would be recommended. I don't think I can eat these. - 1/30/11
