The Editor's Sweet Roasted Beets

Ingredients
2 beets, peeled and chopped (about 1" pieces)1/2 TBSP white wine vinegar1/2 TBSP sugar1/2 TBSP olive oil
Directions
Peel the beets and chop into 1-inch pieces; place in small bowl. Add olive oil, sugar and vinegar and toss. Spread on a parchment-lined (or nonstick) baking sheet into a single layer. Roast at 375 degrees for 45 minutes, stirring once or twice during cooking.
