Cornmeal Muffins

Ingredients
.75 c cornmeal1.25 c skim milk1 c flour.25 c sugar1 tsp baking powder.5 tsp salt1 tsp garlic powder1 tbsp parsley dried1 egg.25 c canola oil.75 c grated swiss cheese
Directions
Preheat oven at 400 F

Mix cornmeal & milk. Let stand 10 minutes. In a separate bowl mix dry ingredients. Mix oil, egg and carrots into cornmeal. Add dry ingredients. Mix. Blend in Cheese.

Bake 20 minutes at 400F. Makes 13 muffins.
