whole wheat flour 1 cup, baking powder 1 tbsp peacan meal 1 cup plus 2 tbsp, sugar (or sub. splenda) 1/2 cup, salt 1/2 tsp., cinnamon1/2 tsp.(twice), nutmeg 1/4 tsp.(twice), allspice 1/4 tsp.(twice), peacan pieces 1/2 cup egg 1, applesauce 1/4 cup, milk 3/4 cup dark brown sugar 2 tbsp.
prep 12 muffincups (nonstick best) make pecan meal by pulsing pecan pieces in blender or food processor till texture of corn meal stir 2 tbsp pecan meal with brown sugar and 1 portion of each spice set aside,stir togeather all the rest of the dry ingredients lightly beat togeather egg and milk add to dry ingredients with apple sauce till just blended(don't over mix some lumpe ok) divde into muffin cups evenly sprikle tops with sugar spice mix bake in preheated 350 degree oven in center of oven for aprox 20 min. Test with toothpick or cake tester (should come out clean ) cool 5 min in muffin pans then tip out and cool on rack best warm but also great cool
