Dee's Pineapple Soup (Meatless) 1 cup serving

Ingredients
2 cups cooked rice or noodles3 cups low sodium chicken broth1 can (about 2-1/4 cups) pineapple in it's own juice1-2 cups cooked chicken, chopped (optional - not included in calorie count)3 TBL tamari or soy sauce, low sodium1/8 tsp ground ginger
Directions
Combine all ingredients and heat until warmed through. Makes approximately six one-cup servings.

Variations: Substitute Ramen noodles or something similar made from rice. I prefer chunk pineapple, but crushed is good as well.
