Ingredients
3 eggs2 tbsp coconut oil, melted1/4 cup mashed pumpkin1/2 cup brown sugar1/2 tsp ground cinnamon1/4 tsp salt1/2 tsp vanilla1/4 cup sifted coconut flour1/4 tsp baking powder
Directions
Blend together eggs, butter, pumpkin, sugar, cinnamon, salt, & vanilla.

Combine coconut flower with baking power & whisk into batter until there are no lumps. Pour batter into greased muffin cups.

Bake at 400 degrees F (205 C) for 18 minutes.
Makes 6 muffins.
