Pumpkin Bread

4 medium eggs (1 egg + 3 egg whites)2 cups sugar1 ½ cups pumpkin1 cup unsweetened applesauce3 ½ cups flour2 teaspoons baking soda2 teaspoons cinnamon½ teaspoon salt½ cup walnuts
1. Preheat oven to 375°F.
2. In a large bowl, cream eggs, sugar, pumpkin, and butter.
3. In another large bowl, sift together flour, baking soda, cinnamon, nutmeg, salt, ginger, and cloves. Add to egg mixture and stir until combined. Stir in chocolate chips and walnuts.
4. Pour mixture into two greased 9-by-5-inch loaf pans. Bake 60 minutes, or until a toothpick inserted in the middle comes out clean. Remove from oven and cool slightly.
