Spinach and goat cheese omlet

Ingredients
3 cups fresh spinach1 Large fresh egg2 egg whites1 Tbsp olive oilFresh basil or Basil pasteFresh Parsley or Parsley paste
Directions
Heat oil in frying pan, add spinach and saute until almost fully cooked, (2-3 minutes. Add Basil and Parsley and saute a minute longer. Combine and whip eggs and egg whites seperatly. Add to spiniach and herbs, cook until egg is solid. Add goat cheese on one side and flip other side over. Remove from pan and place on plate. Enjoy!
