vegetable biryani

Ingredients
2 1/4 cup cooked basmati rice1 c. cabbage, chopped1/2 c. carrots, chopped1/2 c. green pepper, chopped1/2 c. cauliflower, chopped1/4 c. peas100 grams dahi/ yogurt2 med. tomatoes, crushed2 1/2 tsp. soypower1 tsp. oil1 1/2 tsp salt2 Tbsp. biryani masala1/4 tsp. tumeric1/2 tsp. hing1/2 tsp. mustard seeds2 tbsp. cilantro, chopped1 tsp. shredded fresh coconut 2 wedges of lemon
Directions
In non-stick pot, put oil and pop mustard seeds. Add hing next. Then add all the chopped vegetables except the tomatoes. Cook for 5 min. covered, stirring occasionally. Then add the tomatoes, biryani masala, tumeric and soypower with about 1/4 c. water. Cook for about 5 minutes more.Then add Dahi and salt, mix well. Now add the rice and stir gently until all is mixed. Top mixture with juice from lemons, coconut and cilantro. Serve hot. Serves 4 portions.
