Bulgar Chili

Ingredients
1 cup water3/4 tsp salt, divided1/2 cup coarse whole wheat bulgar2T vegetable oil1 cup chopped onion1 cup chopped green pepper2 cloves garlic, minced2 1/2 T chili powder2 tbs oregano2 tbs paprika1 tbs cumin2 cans whole peeled tomato, undrained (14 oz cans)2 cans pinto beans (16 oz cans)
Directions
In a medium saucepan: Bring 1/4 tsp salt and water to a boil. Add bulgar and return to boil. Reduce heat and simmer 20 minutes until water is absorbed. Set aside.

In a large skillet: Heat oil. Saute onion, green pepper, and garlic until onions are soft. Add chili powder, oregano, paprika, and cumin. Stir until oil is absorbed. Stir in tomatoes, beans, bulgar and remaining 1/2 tsp salt. Simmer 20 minutes.

8 servings is an estimate. Very filling recipe!
