Scrambled Tofu

Ingredients
1 Tbsp. olive oil14 oz tofu, extra firmOnion, 1 cup choppedGarlic, 2 cloves, mincedGreen pepper, 1 cup, choppedSalsa (optional)
Directions
Heat olive oil in a saute pan. Add onions and saute until onions are translucent. Add minced garlic and saute for an additional minute. Mash tofu with fingers and add to the saute pan. Cook for 10 minutes, stirring. Remove from heat and top with salsa.
