Crustless Soy Quiche

Ingredients

* Egg, fresh, 4 large (remove) * Silk Soy Milk, 1 cup (remove) * Spinach, fresh, 1 cup (remove) * Onions, raw, .5 cup, chopped (remove) * Garlic, 2 tsp (remove) * Olive Oil, 1 tbsp * Broccoli, fresh, .5 cup, chopped
Preheat oven to 375
Cook onions, garlic and olive oil in pan on medium heat until slightly brown
Lightly salt and pepper
Add in broccoli reduce heat and cover
While broccoli is steaming, mix together four eggs and one cup soy milk
Mix in light salt, pepper, thyme, a dash of nutmeg and parsley
Chop one cup of spinach
Pour pan-cooked vegetable mix into glass baking dish
Pour egg mixture over vegetables
Level using fork or spatula
Cover with aluminum foil
Bake at 375 for 30 minutes
Remove aluminum and bake for additional 15 minutes
