okra bhaji (lady's finger)

Ingredients
1 kg okra / lady's finger1 tsp. oil1 tsp. mustard seed1 tsp. cumin1/4 tsp. hing1 tsp. grated ginger5-6 curry leaves1 tsp. salt3 Tbsp. cilantro1 tsp. fresh lemon juice
Directions
Wash and then dry okra very well. Cut the top and bottom off of the okra and cut into 1/2 inch slices. In non-stick pan add oil to medium heat. First add mustard seeds and cover pan. After seeds have popped, add cumin, ginger, hing and curry leaves.
Stir well then cover and keep on medium heat for about 10 minutes, stirring occasionally. Then add salt, cilantro and lemon juice. Stir well and serve hot. Makes 3 servings.
