Mike's Stir Fry

Ingredients
1 small eggplant, sliced1 large zuchinni squash, sliced1 large yellow squash, sliced1 large onion, sliced1 pkg of mushrooms, slicedAbout 1lb of lean beef flank steak2 tbl Olive Oil5 tbl Lite Soy SauceSeasoning to taste3 cups Brown rice, cooked
Directions
Slice beef and cook in olive oil.
Slice veggies and add once beef is mostly done along with soy sauce. Simmer until veggies desired consistancy. Serve over rice.
