Chicken Poblano Soup

1 tablespoon vegetable oil1 cup onioin - chopped2 cloves garlic - minced1 roasted poblano pepper - chopped1 small can green chilis - chopped3 tablespoons unsalted butter3 small corn tortillas - ripped in small pieces1 tablespoon cumin1 tablespoon chili powder4 cups fat free and low sodium chicken stock1 can 98% fat free cream of chicken soupshredded or chopped chicken1 cup fat free half and half
pulse corn tortillas, cumin and chili powder in food processor until it resemples corn meal
heat oil in dutch oven and saute onions, garlic and peppers until onions are clear
add butter
when butter melts add corn tortilla mixture, stirring constantly to form a roux
Add chicken stock and cream of chicken soup, stirring often
add diced or shredded chicken and simmer for 20 minutes
add half and half and heat through.
can serve with shredded monterey jack cheese and baked tortilla chips.
