Vegan Nut-free Carrot Cake

1 medium banana, mashed1.5 cup carrots, finely grated (about 2 large carrots)2/3 cup granulated sugar (raw, if possible)1/3 cup vegetable oil3/4 cup whole wheat flour1/2 cup unbleached all purpose flour1 tbsp baking powder1/4 tsp salt1 tsp nutmeg1 tsp cinnamon1/2 cup raisins2 tbsp brown sugar
Preheat oven to 350 degrees F and lightly grease an 8x8 square dish with nonstick spray. Set aside.
Mash the banana in a large mixing bowl. Add carrots, sugar, and oil. Stir until combined. Add flours, sugar, baking powder, salt, nutmeg, and cinnamon and mix until everything comes together. Fold raisins into the batter.
Spread the batter into the greased pan and sprinkle the brown sugar evenly on top. Bake at 350 degrees F for 20-25 minutes or until toothpick inserted in center comes out clean.
Let cool before enjoying.
Makes 12 equal portions.
