Geary's Potato Goulash

Ingredients
1/2 # 93% Lean Ground Beef1 cup boiled cubed potatoes, drained2 cups tomatoes, fresh, canned or frozen (thawed)1/2 cup chopped onion2 fresh medium size mushrooms, sliced1/4 tsp. Mrs. Dash Lemon Pepper (I used store brand)1/4 tsp. garlic powder (not salt)
Directions
Put cubed potatoes on to boil. In a large skilllet with lid, crumble and brown ground beef, add onion and mushrooms when it's just about done. Drain and add potatoes, tomatoes and seasoning. Stir well. Cover, reduce heat to low, and simmer for about 15 minutes. If it starts to stick add a little water. You can use the potato water. This is low carb, low sodium and low fat. Makes 3 servings. I didn't measure, just divided up.
