Tofu Noodle Bowl

1. Organic Planet Soba Noodles (3 bundles/1 package), 8 oz2. Tofu (firm), 12 oz 3. Vegetable Broth, 4 cup 4. Snow Peas, fresh, 2 cup 5. Crimini Mushrooms, 8 oz 6. Carrots, raw, 2 large (7-1/4" to 8-1/2" long) 7. Soy Sauce *Low sodium, 1 tbsp8. Jalapeno Peppers, .5 pepper 9. Ginger Root, 2 tsp 10. Cilantro, raw, 2 tbsp11. green onion (1 stalk), 2 serving
1. Bring a large pot of water to a boil and cook soba noodles according to package directions. Meanwhile, in another large pot, bring tofu, vegetable broth, snow peas, mushrooms, carrots, soy sauce, jalapeņo and ginger to a boil; reduce heat and simmer 5-7 minutes or until vegetables are soft.
2. Divide cooked noodles into four bowls and ladle soup mixture over noodles. Sprinkle cilantro and green onions over each serving.
