Vegetable Fritters

Ingredients
1/2 c shredded carrots1 c shredded zucchini1 12 oz can whole kernal corn1 egg3/4 c flour1 tsp baking powder1/4 c cornmeal1/2 c milkNote: any vegetables can be used
Directions
Combine all ingrediants and then fry in a skillet over medium heat using vegetable oil.

Drop into the skillet in small patches - cooks very similar to a pancake.

    Overall, fairly easy to make. However, needed some spices for flavor (too bland as written). Also, would not make again unless I can figure out how to bake instead of fry. - 10/2/11
