Ingredients
Olive Oil, 4 tbsp Garlic, 2 TblspOnions, raw, 1 quartered then thinly slicedTomato Paste 2 TblspEggplant, fresh, 1 eggplant, unpeeled Chopped in 1 inch cubesPeppers, sweet, red, raw, sliced, 1 Chopped 1/2 inch piecesGreen Peppers (bell peppers), 1 Chopped 1/2 inch pieces*Summer Squash, 2 Chpped into 1 inch peicesRed Ripe Tomatoes, 2 tomatos chopped in 1 inch pieces.Salt, 1 tsp Pepper, black, .50 tsp Vegetable Broth, .50 cup Parmesan Cheese, grated, .25 cup Ground Turkey, 1 pound browned or 1/2 inch made into meatballes the cooked
Directions
Makes 6 Servings

Add Olive oil and sute onions. Then add tomato paste until thinned with onions

Add all other ingredients (except Parmsean cheese) and simmer (covered) stirring occasionally until vedgtables are tender.

Serve and garnish with Parmesan Cheese.

My wife does not like Zucchini so I use only summer squash. This recepe is supposed to have 1 of each ! Also delicious without the turkey !
