Olive Oil and Herb Chicken Pasta

2 - 4 oz Grilled chicken breasts, cubed into bite-sized pieces4 oz Barilla Plus penne pasta, cooked according to package directions1 medium zuchini, sliced1/2 medium onion, chopped1/2 medium red bell pepper, sliced1/4 cup asiago cheeseBasil to taste ( I use about 1/2 tsp)Oregano to taste (I use about 1/2 tsp)1Tbs + 1 tsp olive oil
Grill two 4 oz chicken breasts (or use leftover grilled chicken or precooked chicken). Cube into bite-sized pieces. Cook pasta according to package directions. Chop onion and lightly saute in a very small amount of olive oil (I use less than 1 tsp). Once onion begins to brown slightly, add zuchini and bell pepper and saute for about 5-6 minutes. Place chicken, vegatables, and pasta in a large bowl and sprinkle with 1 Tbs olive oil. Sprinkle with basil and oregano and top with 1/4 c. Asiago Cheese. Toss all ingredients together and serve warm. Makes 4 servings.
