Skillet Lasagna

Ingredients
1 lb ground turkey1 small onion chopped3 cloves garlic minced1 can del monte no salt diced tomatoes1 - 1/4 cup water8 oz Classico tomato and basil sauce1 tbsp dried parsley flakes1 tsp dried basil leaves1 tsp dried oregano leaves2 1/2 cups (or 6 oz) broken up whole wheat lasagna noodles1 cup fat free cottage cheese1/4 cup grated parmesan cheesedash of basil and pepper (optional)2 egg whites1/2 cup shredded fat free mozzarella cheese
Directions
In a large skillet, brown turkey with onions and garlic, then drain. Add tomatoes, water, tomato sauce, parsley, basil and oregano. Stir in uncooked pasta. Bring to a boil, stirring occassionally. Reduce heat, cover and simmer for 20 minutes or until pasta is tender. Combine cottage and parmesan cheeses. Mix in the egg whites. Sprinkle in basil and pepper to taste. Drop cheese mixture by rounded tablespoons onto pasta mixture. Cover and cook for 5 minutes more. Sprinkle with shredded mozzarella and serve.

    I made this for my family and I yesterday and we loved it! The only change I made was instead of diced tomatoes, I used rotel instead for a little kick. Good "school night" recipe! - 9/13/11
