Spinach Alfredo Sauce

1 tbsp extra light olive oil2 tsp chopped or minced garlic1 can (12 oz.) evaporated non-fat milk1 tsp white or black pepper1/2 - 1 tsp nutmeg 1 package fresh spinach1 tsp corn starch (optional)2 oz shredded romano cheese
Heat 1 tbsp olive oil in a large skillet over medium heat. Add garlic and saute` about 1 minute.
Add evaporated milk, pepper and nutmeg. Bring the mixture to a boil and let it cook until reduced so that the milk coats the back of a spoon.
Add the cleaned, washed and dried spinach to the pan and cover.
Cook for about a minute with the cover on, then uncover and stir.
If the sauce seems thin, add 1 tsp of corn starch that you have mixed with a little bit of water, stirring constantly. Cook for a minute more, add the cheese, stir, and pour over you favorite pasta.

I made this twice today.. I it didnt taste like alfredo to me, not to say that to some it doesnt but i followed the recipe to the "t" and it doesnt seem cheesy.. like alfredo.. its rather thin even with the thickener.I was really excited about this one, but i didnt care for it at all didnt eat it :( - 11/17/08

WAY too much nutmeg and I only used a scant 1/2 tsp. I would reccommend only using a dash like in most alfredo recipes. Also, if you're using fresh ground pepper, use only half the pepper suggested as it is stronger. I will make this again with some adjustments. Really good basic recipe. Thanks!! - 3/22/09

I was so excited to try this recipe. Alfredo sauce is a favorite. I feel like I put it too much garlic and pepper. It was too hot tasting for me. I am going to make this again & serve to DH. He loves chicken & pasta with Alfredo sauce and this is great and healthy too!. Thank you! - 11/25/08

I like the recipe as is.
For something different replace nutmeg with old bay spice.
Add a tablespoon of Pernot to oraginal recipe.I get my specialty liquor's from a local bar,I bring my own container and orer a shot or two for the recipe.
A sauted schallot would be good addition...Chef Jim - 11/16/08
