1 tbsp extra light olive oil2 tsp chopped or minced garlic1 can (12 oz.) evaporated non-fat milk1 tsp white or black pepper1/2 - 1 tsp nutmeg 1 package fresh spinach1 tsp corn starch (optional)2 oz shredded romano cheese
Directions
Heat 1 tbsp olive oil in a large skillet over medium heat. Add garlic and saute` about 1 minute.
Add evaporated milk, pepper and nutmeg. Bring the mixture to a boil and let it cook until reduced so that the milk coats the back of a spoon.
Add the cleaned, washed and dried spinach to the pan and cover.
Cook for about a minute with the cover on, then uncover and stir.
If the sauce seems thin, add 1 tsp of corn starch that you have mixed with a little bit of water, stirring constantly. Cook for a minute more, add the cheese, stir, and pour over you favorite pasta.

Loved it! I followed your directions exactly and waited until the milk reduced and coated the spoon. Added the romano and, when serving, the cheese stretched in ribbons from the spinach. My son wanted more! (So did I.) Thank you! - 1/14/21

I made this last night to put on some ravioli. My family just loved it and said it was a keeper. I also added some onions and also thickened with the suggested cornstarch. It was thinner than regular alfredo. If you want it thicker just add a little more cornstarch. - 3/10/12

I liked it, was hoping for something more alfredo like but I may have failed at getting it to set right as I have no experience with making my own. Next time I want to add mushrooms and onion - 9/18/11

This was an incredibly delicious meal. My whole family loved it. In fact, my husband and son fought over who got to have the one serving of seconds that were left. And my son asked me to make it again asap. - 4/24/09

How much spinich is everyone using? I buy mine at costco so I am sure that bag is much larger than what is being suggested.

So to be helpful next time actually give measurements, like oz of the bag or such so we know...Thanks. - 4/15/09

WAY too much nutmeg and I only used a scant 1/2 tsp. I would reccommend only using a dash like in most alfredo recipes. Also, if you're using fresh ground pepper, use only half the pepper suggested as it is stronger. I will make this again with some adjustments. Really good basic recipe. Thanks!! - 3/22/09

Oh my gosh this was a terrific recipe. Not thick and overly rich like many alfredo sauces. It is definitely a keeper! - 1/7/09

I was so excited to try this recipe. Alfredo sauce is a favorite. I feel like I put it too much garlic and pepper. It was too hot tasting for me. I am going to make this again & serve to DH. He loves chicken & pasta with Alfredo sauce and this is great and healthy too!. Thank you! - 11/25/08

It was ok, but a little bland. It's hard to reduce the evaporated milk. - 11/19/08

I used it for eggs benedict. I also used about 3/4 bag spinach to leave it with a better balance of spinach to sauce. It worked perfectly! - 11/16/08

I like the recipe as is.
For something different replace nutmeg with old bay spice.
Add a tablespoon of Pernot to oraginal recipe.I get my specialty liquor's from a local bar,I bring my own container and orer a shot or two for the recipe.
A sauted schallot would be good addition...Chef Jim - 11/16/08

Better for us without the nutmeg. Next time I'll try it with a dash of clove. - 10/14/07

Good recipe, but WAY too much pepper. I used what it called for, but next time I'll be adding much less. Otherwise, it was easy and good. We added chicken for some protein. - 7/10/07

I made this for my husband and he LOVED it. We added chicken, mushrooms, and some fresh tomatoes for a heartier meal. Great alternative to fatty alfredo sauces. - 6/24/07

Very nice healthy alternative to high fat/cheese sauces. I had to double it feed the whole family (6 of us), but everyone enjoyed it! - 3/14/07
