LINGUINE WITH RED PEPPER SAUCE

Ingredients
8 oz. linguine 1/2 jar sweet roasted peppers (7.25 oz. jar) drained 1/4 cup sliced green onions (about 2 large) 1 small clove garlic minced 1/3 cup low-fat sour cream 1/3 cup evaporated skim milk 1/2 t salt 1/8 t ground black pepper Cook linguine and drain. Process red peppers in blender or food processor until smooth. Coat medium saucepan with cooking spray, place over medium high heat until hot. Add onions and garlic, cook 5 mins. until tender. Remove from heat. Add sour cream and red pepper puree. Gradually add milk stirring with wire whisk until blended. Return to heat, cook until thoroughly blended and smooth, stirring constantly. Stir in salt & pepper. Combine linguine & sauce and toss well. Serve immediately.
