CHICKEN AND COUSCOUS TOSS - WHAT TO DO WITH LEFTOVER CHICKEN

Ingredients
1 cup canned reduced sodium chicken broth 1.25 cups uncooked couscous 1 large sweet red pepper cut into 1" pieces .5 cup sliced green onions (about 2 large) .5 teaspoon garlic powder .75 lb. skinned, roasted chicken breast (about 4 breast halves) .5 cup red wine vinegar 1.5 teaspoon dried basil or oregano Bring broth to boil in small pan and add couscous. Cover and remove from heat. Let stand 5 minutes. Combine pepper & onions in large microwave safe bowl. Microwave high 4 minutes or until crisp-tender. Drain well, sprinkle with garlic powder. Cut chicken into 1" pieces. Fluff couscous, add all ingredients to pepper mixture. Microwave 1-2 minutes until just hot. Serve immediately.
