Super Fantastic Super Quick High-Protein Vegetarian Pizza

Ingredients
1 Sonoma Carb Cutting TortillaAs much spinach as you can fit on the tortilla (abt 1-2 cups)1 serving (1/2 package) Tofu Life brand Tofu (or any other seasoned tofu)1 slice of TJ's Part Skim MozzarellaJuice of 1/2 lemon
Directions
1. Place the tortilla on a toaster oven rack
2. Put as much fresh spinach on the tortilla as will fit
3. Cut the tofu into slices and place on top of spinach
4. Rip the mozzarella slice into pieces and place on top of tofu (put more pieces in the middle so there's less chance of cheese dripping onto the bottom of your toaster oven)
5. Drizzle the pizza with the lemon juice
6. Put the rack in the oven and toast/bake until the cheese is all melted and deliciously gooey (about 5 minutes?)
7. Savor the healthy yummy pizza goodness. The tortilla will still be soft, so I eat it like a roll-up/taco.
