Apple Fritters

Batter:3 Medium Green Apples, cored and diced1 cup of Domata Living Flour (Gluten Free)1 tsp. Baking Soda1 Tbsp. Vanilla Extract1/2 cup of Almond Milk2 Servings Liquid Stevia4 oz. Cream CheeseFrosting:4 oz. Cream Cheese1 Serving liquid Stevia1 tsp. Vanilla Extract2 oz. Almond Milk
Directions:
Core and dice apples, coat with cinnamon, set aside. In a microwave safe bowl, add 4 oz, cream cheese, 1/2 cup of almond milk, 1 Tbsp. vanilla extract, and 2 servings of liquid stevia. Microwave for approximately 30 seconds. Remove from microwave and stir. Cheese will be lumpy. Add 1 Cup of gluten free flour (domata living flour) and 1 tsp. of baking soda. Mix well. Add apples and cinnamon to flour mix. Mix well.
Deep fry or pan fry with enough oil to cover tablespoon sized amounts of apple dough. Fry on high heat for about 3 minutes. Remove from oil with slotted spoon and set on paper towel to absorb excess oil. Be sure to use oil high in monounsaturated fat.
To make the frosting place 4 oz of cream cheese in a bowl and microwave for 30 seconds. Remove from microwave and add 1 serving of stevia, 1 tsp. of vanilla extract and 2 oz. of almond milk. whisk together to remove any lumps. Drizzle over the top of fritters as desired.
