10 1/2 fl oz whole milk3 whole eggs 3 oz AP flour1 oz Dutch Cocoa Powder1 oz granulated sugar2 Tbs melted butter 1 tsp salt
serving size is 2 crepes, makes 12 servings
24 5 inch diameter crepes
Blend all the ingredients in a food processor for 1 minute . Scrape the sides and mix for an additional 30 sec. Allow to rest 15 minutes.
Heat a 5 inch non-stick pan. Ladel about 2Tbs of batter into the pan, cook untilll edges start to look dry. Turn the crepe once and cook shortly on the second side. Repeat until all the batter is cooked.
Keep warm until needed or wrap well and freeze for up to 3 months...can re-heat in microwave as needed.
