Tuscan Baked eggs

Ingredients
1 T grapeseed oil1 scallion chopped1 t garlic minced.5 c roasted diced tomatoes2 t chopped fresh thyme
Directions
Makes 1 serving
1. Saute garlic about 1 min, add tomatoes and thyme; simmer about 7min.
2. Preheat broiler
3. Remove 1/4 c of tomato mix and set aside.
4. Add eggs onto tomato mix, cover and cook about 3 min.
5. Return tomato mix on top of egg white, scatter scallions on top and broil for 1-2min.
