Fresh Fruit with Orange Ricotta

Ingredients
1 3/4 C Part Skim Ricotta Cheese1/4 C Orange Juice1 1/2 t Orange Zest1 T Honey3 T Mint Leaves, Chopped5 Sprigs Mint (for garnish)7 1/2 C Fresh Fruit
Directions
Combine fruit and chopped mint in a large bowl then divide evenly among 5 dishes. Combine the ricotta, orange juice and zest, and honey in a blender or food processor and puree. Spoon evenly over the fruit and garnish each dish with a spring of mint. Enjoy.
