Homemade whole wheat bread

Homemade whole wheat bread is surprisingly easy to make. Getting the dough right at the final kneading is a
hands-on process ... but I picked it up quick. If I can do this, anyone can

mix yeast and 2 cups of fresh-ground flour together in stand mixer bowl. Heat water to 105-110 degrees and add to flour/yeast mixture. Mix well, but quickly until most lumps are broken up. Leave alone and let rise for 15 minutes.

After rising, turn on mixer and add oil, honey, salt and 2 cups of flour. Mix well and begin adding the remaining 3 cups of flour.

Knead in mixer until dough is stretchy and bounces back. Dough should be slightly sticky, but dry-ish (you shouldn't have any dough stuck to your finger after you poke it)

Roll dough out of bowl and onto lightly floured surface. Cut into 3 balls (roughly 25 ounces each) and knead each ball and shape into loaf. Turn into loaf pan and let rise 1 hour.

Pre heat oven to 350 degrees. Cook bread for 25-30 minutes. Let cool and slice. You should get at least 12 slices out of each loaf. Each slice is about 120 calories ... but if you grind your own wheatberries its chock-full of nutrition and good stuff for you.

This freezes very well!
