200 grams yogurt (dahi)1/2 cup besan flour4 tsp. sugar1 1/2 tsp. oil1 tsp. ginger, grated1 tsp. mustard seed1/2 tsp cumin1/2 tsp. hing1/2 tsp tumeric5-6 curry leaves1 1/2 tsp salt2 Tbsp. cilantro, chopped
Mix besan flour with about 1 cup water. Whisk well til smooth. Then add yogurt (dahi) and blend well. Add 1 more cup of water, tumeric, salt and sugar. Put in pot on medium heat and allow to cook, stirring frequently. After about 5 minutes mixture will come to a medium thick consistency. If too thick, add water. In a non-stick small pot, put oil on medium heat. When hot add mustard seeds and allow to pop. Then add cumin, hing, ginger and curry leaves. Saute for a minute and then add to yogurt mixture. Cook for 2 minutes more and then switch off heat. Add chopped cilantro and serve hot. Makes 4-5 servings.
