Pasta with Butternut Squash

1 lb spaghetti noodles1 medium butternut squash4 cups fresh spinach1 medium onion chopped5-8 cloves garlic1/2 stick butter1/2 cup olive oil1/2 cup white winesalt & pepper to taste
Cut up squash into 1 inch cubes. Toss with olive oil to coat, salt and pepper and add in whole garlic cloves in skin. Roast in 450 degree oven for 25 minutes.
Meanwhile, start water for pasta. Melt 1/4 cup olive oil and 1/2 stick butter in a saute pan over medium heat. Add chopped onion. Cook over medium or low heat until soft, do not brown. Add wine over medium heat and reduce to approx 1 cup liquid. Add spinach, cover to wilt.
Remove squash from oven. Peel garlic and add garlic and sqaush to pan of onions and spinach. Reduce heat to low. Add 1/2 cup water and cover.
Drain pasta while aldente and add to pan of onions and spinach. Toss to coat. Drizzle with remaining olive oil. Serve immediately.
