Chunky Minestrone

Ingredients
2 tsp olive oil1 ½ C Chopped onion1 Medium carrot, ½ lengthwise and sliced (about ¾ C)1 clove garlic, minced-----------------½ C long grain rice, uncooked1 tsp dried Italian seasoning2 ½ C water1 lrg (28 oz) can crushed tomatoes2 cans chicken broth-------------------1 medium zucchini, halved lengthwise and sliced (about 2 cups)¼ tsp salt¼ tsp pepper1 (15 ½ oz) can cannelleni beans, drained (you can use any beans)1 (10 oz) pkg frozen chopped spinach, thawed and drained)-----------------------------2/3 C grated Parmesan cheese (optional)
Directions
Heat oil in large dutch oven over medium high heat. Add onion, carrot and garlic.
Saute 3 min. Add rice and next 4 ingredients; bring to a boil. Cover, reduce heat and simmer 20 minutes. Add zucchini and next 4 ingredients; cook an additional 5 minutes. Ladle into individual soup bowls and sprinkle with cheese. Yield 10 ½ C
