Ingredients
Directions
olive oil, garlic, red or purple onion, ripe tomatoes, red pepper, thyme, oregano, spaghetti sauce (I used Ragu garden style), alfredo sauce, vodka
On medium heat two tablespoons of olive oil in pan. Add chopped garlic and onion. Stir fry in pan. As garlic browns and the onion becomes translucent add two medium red tomatoes chopped into chunks. Press and stir the tomatoes with the garlic onion mixture. Add spices (red pepper, thyme, oregano). Stir. Reduce heat so the sauce is just simmering. Add vodka. Stir. Turn heat back up and let vodka bubble off. Add ragu. Add alfredo sauce. Stir. Simmer sauce for about two minutes. You can add a little salt and black pepper if you like.
Spoon about 1/4 of sauce (about 1/3 cup) onto cooked pasta.
Makes 4 servings.
