Pj's Steak stir fry with mung bean noodles

8 oz sirloin steak, cut into strips8 oz pck cellophane (mung bean) noodles1 med onion, chopped4 stalks celery, sliced1/2 med green bell pepper1 roasted red bell pepper4oz can mushrooms4 cups raw spinach1 sm carton of grape tomatoes5 cloves of garlic, minced2 tbsp soy sauce1/4 cup beef stocksalt and pepper to taste1 tsp ginger1 tsp onion powder
Place cellophane noodles in a heat proof bowl and add boiling water. Let sit 20 minutes then drain. Meanwhile, stir fry steak in olive oil. Add 3 cloves of garlic and soysauce. When done remove from pan and clean. Next stirfry onions, peppers, celery, spinach, mushrooms, grape tomatoes and remaining garlic. When tender add salt, pepper, ginger and onion powder. Next add beef stock. Serve over cellophane noodles. Makes 4 large servings.
