Spicy Chicken Soup

2 TBSP Extra Virgin Olive Oil1.1 LB Boneless Skinless Chicken Breast.5 LB Chicken Thigh Meat2 Small Bell Peppers Chopped1 Large Onion Chopped3 Tomatos ChoppedLime Juice from One Half Lime2 Garlice Cloves Minced1/2 TBSP Salt7 Cups Reduced Sodium Chicken BrothMexican Spice Pack
Lightly brown chicken with the spice pack and half the onions in the olive oil.
Remove chicken from pan and place on plate, cover with foil.
In same pan add all other ingredients except corn , broth, cilantro and lime.
Simmer until tomatos shrivel. Stir frequently. About 30 minutes.
Add broth.
Add chicken and drippings.
Bring to boil.
Reduce heat and simmer for as long as you can. Chicken will become increasingly tender over time. Add additional water if necessary.
Add corn 15 minutes before serving.
Remove from heat add lime, cilantro and serve.
Optional - Avacado, shredded cabbage
