Spicy Green Tomato Relish

Ingredients
Green tomatoes, 3200 gramsOnions, 740 gramsGreen bell peppers, 645 gramsSweet red bell peppers, 400 gramsJalapeno (or similar) red and/or green peppers, 220 gramsCider Vinegar, 1 cupGranulated sugar, 1/2 cupSalt, 1 tspCelery seed, 1 tspMustard seed, 1 tspCurry powder, 1/2 tspLime juice, 1T
Directions
Seed peppers and chop or grind peppers, green tomatoes, and onions. Drain out the juice with a strainer or colander. Should be a quart or more of juice that can be used elsewhere for vegetable stock. Add the remaining ingredients to a non-aluminum pot and bring to a boil. Add the drained ingredients to the pot and heat to boiling. Cook for 5-10 minutes. Can as you would tomatoes or freeze. Makes about 11 cups. Serving size is 1/8 cup.
Note: Add more sugar if it is too sour for your taste. Delete jalapenos if it is too spicy for you.
